Our gluten free dough has no gluten in it. We hired a master chef to work with us on the gluten free recipe and process. We use a dedicated mixer for gluten free dough. We use rice flour to open and stretch both our regular and gluten free dough. We use a number of other precautions to isolate the gluten free dough from gluten contamination, however this is not a 100%25 free gluten free environment.
